Making madeleines
Madeleines are small, buttery cakes that originated in France. They are shaped like shells and have a distinctive hump on one side. They are perfect for dipping in tea or coffee, or just enjoying as a snack.

I love making madeleines for my child because they are easy to make and he loves them. He likes them plain, but sometimes I add some lemon zest, chocolate chips, or nuts to make them more interesting. He also likes to help me in the kitchen and watch the batter rise in the oven.

Here is how I make madeleines:

- Preheat the oven to 375°F (190°C) and grease a madeleine pan with butter or cooking spray.

- In a small saucepan over low heat, melt 10 tablespoons (140 g) of unsalted butter and let it cool slightly.

- In a large bowl, whisk together 3 eggs and 2/3 cup (130 g) of granulated sugar until light and fluffy.

- Add 1 teaspoon of vanilla extract and a pinch of salt and whisk well.

- Sift 1 cup (125 g) of all-purpose flour over the egg mixture and fold gently with a spatula until well combined.

- Stir in the melted butter and any optional ingredients you like, such as lemon zest, chocolate chips, or nuts.

- Spoon the batter into the prepared madeleine pan, filling each mold about three-quarters full.

- Bake for 10 to 12 minutes or until golden and springy to the touch.

- Let the madeleines cool slightly in the pan before transferring them to a wire rack.

- Enjoy them warm or at room temperature, dusted with powdered sugar if desired.

Madeleines are best eaten the same day they are baked, but you can store them in an airtight container for up to two days. You can also freeze them for up to three months and reheat them in the oven before serving.
